POSITION SUMMARY
The Chateau Sous Chefs contribute a large part to the success of our clients. Chateau treats food as medicine, and the Chef’s care in providing the nutrients needed for our clients is important to their recovery.
In consultation with the nutritional advisor and the Chef, the Sous Chefs help create menus and deliver portions that support Chateau’s client recovery. It is the Sous Chef's responsibility to carry out the official menu in a professional manner supporting the goals and mission of Chateau's clients.
QUALIFICATIONS
Education:
Serve safe preferred
Food handler’s permit required
Formal culinary education preferred
Training and Experience:
Two years’ experience in food preparation preferred.
Knowledge Required:
Knowledge of proper food preparation and safety methods. Basic knowledge of special diets: Vegan, Vegetarian, Gluten Free, Dairy Free, Keto, etc
MAJOR DUTIES AND RESPONSIBILITIES
Deliver healthy, nutrient dense meals in a timely and appealing way.
Estimates food requirements and complies shopping lists.
Maintains equipment and cooking area to ensure safe and sanitary conditions.
Performs other duties as assigned.
Supervise other kitchen staff as assigned.

Ability to stoop, kneel, crouch, crawl, reach, stand, walk, push, pull, lift and grasp. Ability to run a distance of 400 meters in 2 ½ minutes or less. Must be able to perceive the attributes of objects such as size, shape, temperature and/or texture by touching with skin, particularly that of the fingertips. Ability to express and exchange ideas via spoken word during activities in which they must convey detail or important spoken instructions to others accurately, sometimes quickly and loudly. Hearing to perceive the nature of sounds with no less than 40 db loss @ Hz, 1000 Hz, and 2000 Hz with or without correction; ability to perceive detailed information through oral communication and to make fine discriminations in sound. Perform repetitive motions with wrists, hands and fingers. Be able to exert up to 100 pounds of force occasionally and to be able to lift, carry, push, pull or otherwise move objects. Work requires a minimum standard of visual acuity with or without correction that will enable people in the role to complete administrative and clerical tasks and visually observe students on the unit and in therapeutic activities.
